What do you do with Bear meat?

Just wondering what most do with Bear meat make it up in jurkey,summer sausage,roasts? I am going on a bear hunt in june and was wondering.Thanks

Eat it make it into Honey baked hams like they do for paula deen christmas hams

Get the fat off the sooner the better. That's what we did made some sausage out of smaller cuts. Made some up at camp in deer season was scarfed up before the rest of supper was put on the table. lol
Breakfast sausage.........100x better than the best pork sausage you have ever had.......
Bear meat can be some of the best wild game you ever tasted. I've also had it where I couldn't bear to take a second bite. It's all in how it's handled but there are 3 very important things to remember......

Get rid of the fat!

It is best in sausages and roasts. Best when cooked very slowly at low heat. Pot roasting it makes the best pot roast you may ever taste. Sausage is fantastic when done right. I use any recipe I have for deer sausage and mix LEAN bear meat 60% with 40% whole pork butts for the grinder and season normally according to the sausage recipe

Thanks for all the Info guys the last I went on a bear hunt the guide said that the only thing you do with a bear is feed it to other bear
I gave all of mine to a friend..I just cant seem to eat it!!!!

Seems to me that the guides don't wanna deal with the meat and would rather feed it back to the bears.
Also depends on what the bear eats ,heavily baited and dumpster divers may not taste as good.
When I had my second bear butchered I had the butcher take some of the steaks and slice them really thin like minute steaks. Put em in a skillet or on the grill and fry em up. Throw some veggies in with them, mushrooms, onions, and peppers. Toast up a hoagie roll. Put it all on the roll and melt some mozzarella and provolone cheese on it. Best cheesesteaks you'll ever have.
I got steaks, sausage, and meat sticks (like slim jims but thicker) out of mine I got this year. Sticks are almost gone already and the sausage is awesome. Sausage tastes better than any other I've had. I got what my butcher recommended, he and did a great job. I feel it depends on the butcher, how the meat will turn out in the end. A butcher that has little/no experience in bears, probably won't have nearly as good of meat. As stated before the bears diet also plays a big role.

Bear burgers last night for supper were really good! This was only a 140# bear so maybe a big old boar wouldn't taste any thing like mine?
Any one make jerky from bear ?
top of the hill butchering, berks county i think, brandywine heights is where they are, these are the guys who we bear hunt with, every year we take whatever bear are harvested send it home with them when they leave and they make breakfast sausage out of it then we split it up amongst everyone! its great sausage!
