Scored big on erie walleyes...any suggestion on eating? Planned on makin some civiche, though need some ideas on other cooked recipes. Gonna stuff some with lump crab meat I caught in OBX.

walleye stuffed with crab in broiler ... or on grill with butter onions and maybe some lemon slices.... wow...delicious

Beer batter and deep fried. Put a fillet in a foil or parchment paper envelope with the following ingredients. A bed of fresh parsley, the fillet on top, some chopped spring onions on top of the fillet and two lemon slices, then add some white wine that has been sitting for an hour with a BC pinch of saffron in it. Fold the envelope almost closed and pour in two or three table spoons of the wine saffron mixture then close it tight and put it in an oven at 400 degrees till the envelope puff up and the fish is done, about 15 minutes depending on the thickness of the fish. When you serve the fish leave the parsley in the envelope and pour the wine saffron and juices over the fish. Serve with lemon rice.

Lemon rice:

rice is one part rice and one part water you can make more or less depending how much you want. There is only two of us at home anymore so this is my recipe and amount of ingredients.

1/2 cup white rice
1 cup cold water
one teaspoon McCormick lemon and herb seasoning
the grated zest from one lemon
salt to taste

put water in pot add lemon and herb seasoning, salt and lemon zest. Bring to boil and stir in the rice, when it comes back to boil put the lid on the pot and turn down to low to simmer for 20 minutes. After 20 minutes pull off heat and let stand with lid on for 10 minutes then plate and serve. Born appetit

Agreed! Flour first, then dip in beer batter. Serve with tartar sauce & lemon..simple but delicious.
