thanks for the pic. couldn't figure out went wrong. tried deleting post to start over but no delete option. they are collagen casings on this batch but I also use 21 mm sheep casings. the spices are from con yeager spice co. there is a store about 20 min. from me.

Con Yegar had a class that you could take to learn how to make deer snacks at the Butler County Vo Tech at one time. Don't know if they still have them, they are usually in Feb or March - just after deer season, when everyone is still hungry for pepper sticks and before fall archery season starts. Feb and March are about the only two months when you can get hunters to attend the class.

Looks like those sticks have high temp cheese mixed in. I bought the same seasoning and used the casings from their kit and wasn't thrilled on how it turned out. I was looking for more of a smaller diameter stick and the casing wasn't the best either. I was looking more of a cross between a stick and jerky. I ended up taking my smallest tubing stuffer for my meat grinder and fitting it on my jerky shooter. I have made batches with the stick seasoning and used cheddar and pepper jack cheese. Everyone that tries it really likes it.

So your method is with NO casings? I tried it once with my Jerky cannon turned out to be round jerky for me. I was using the ground venison recipe

They are still round but has more a a jerky texture. My shooter also has an option for a flatter end result but I wasn't sure how the cheese would fit thru the opening.
