I want to try and smoke some venison this winter and was wondering if any of you have a good jerkey and kielbasa recipe. I am useing a small propane smoker that I bought used with no instructions so if anyone could tell me what temp to smoker should be between and for how long that would be helpful. I will learn as I go but I need a good starting point. Any info is greatly appreciated. Thanks.

I use whole muscle sliced 3/8" thick for my jerky and marinade it with High Mountain jerky cure, soy sauce, and worchestershire sauce. I use a dehydrator, so I'm not much help with the smoker settings.

As far as kielbasa, I have it made at Herb Brittner's Smoke House in Harmony, PA, so I'm not much help there either

If you want a good Jerky Mix, Con-Yeager all the way!

You can not go wrong and it takes you Step by Step by Step on temps and what not...

I have not tried the kielbasa mix yet, but will be sometime this year.. many others on here have said you can not go wrong with Con-yeager's kielbasa mix!

Con-Yeager steps it out for you, from cutting to soaking to smoking and curing!

Personally, I'd stay away from some of the recipes...UNLESS you have already tasted them and like them.....Been There, Done that and ended up Wasting to much meat!

And expensive.

It's so easy and inexpensive to make your own jerky/kielbasa/sausage that I think everyone should give it a try.

I just did 21 lbs of sausage a couple of weeks ago. Total cost was less than $40.

Thanks for the advise guys. This is my first time using a smoker so I'm sure it will be trial and error. Keep the suggestions comming. All info is greatly appreciated.

The best advice I can give you is to buy the book.
sausagemaking and meat processing is a great hobby that dovetails nicely with hunting but it can have drawbacks that could put you in the hospital.
A good book will have not just recipes, but the reasons why things are done the way they are done. Those reasons can make all the difference between turning out a product that you can enjoy and be proud of, or turning out a product that's going to be the start an interesting week by making you feel like you swallowed a very angry pitbull.
Food safety is very important and it's not something you can learn just by making a post asking for recipes.
One other benefit to having the book is that after you've made your jerky and it's turned out to be something you really enjoyed doing, you'll be looking for other recipes to try and they're gonna make you look forward to next season.

Great advice. I have "Home Sausage Making" by Susan Mahnke Peery and Charles G Reavis. I haven't found a bad recipe in it yet.

Well after reading a couple articles I figured I would give it a try. This is my first attempt with kielbasa and it turned out great. I used cherry wood for this batch and now I have a batch in with hickory wood. Here are a few pics...

Yeah it is. I think I found a new hobby. Maybe after the jerkey experiment this weekend I will try to smoke a whole turkey.
