Looking at sellin the atv and going with a sxs. Going to go with Can am defender. My question is will an 800 suit me or will i be better off with the 1000. I will run larger mud tires on it and use it to plow a bit and haul hinting stuff around. If I get in thick mud I want the power to get out.

Very rarely is bigger not better but an 800cc Can am will do everything you want it to do.

I own a can am outlander xt 1000 quad. I can tell you it is an awesome machine and does everything I ask it to do. It goes through anything and pulls my atv trailer like it's not there. I have a 1/2 mile drive that I use it to plow with up to 8-10 inches then I get out the duramax and v-plow. Go 1000cc and don't look back!
