Here is a recipe that I use for turkey breast meat . Great over waffles or biscuits .
Cook 1 1/2 pounds of turkey breast in water with a bit of salt for 20 minutes . Cool and cut into chunks .
Melt 4 T of butter in a saucepan
Add 1/3 C flour,1/2 t salt and 1/4 t pepper and wisk until smoothe .
Add 1 1/2 C milk and 1 C chicken broth to roux .
Stir over medium heat until thickened .
Add 1 C peas ,small jar of pimentos, small can of mushrooms and the turkey cubes .
Add a few Tablespoons of Sherry and heat through .
Serve over toast,waffles or rice . Excellent flavor !
