Wife made up a batch of what one of her GF's called "Texas Caviar" and I just HAD to put some meat in it.

I have some of the Costco Salmon burgers...but you could use fresh or store bought fillets too...this is just more "workplace" microwave friendly...

Cook the salmon until done and add to a serving of:

Texas Caviar
1 can pinto beans, drained
1 can black beans, drained
2 fresh ears of PA Sweet corn, cobbed(?)
1 medium red onion, diced
1 red pepper diced
1 green or 2-3 jalapeno peppers (no seeds or veins please

2-3 tbls chopped cilantro
1/2 cup olive oil
1/2 cup rice vinegar
1/4 cup splenda or sugar
salt and pepper to taste

I can't tell you how good this was...very light and fresh tasting. good thing she made a big batch of the salad...

It's normally served on corn chips like salsa, and served COLD. I ate it cold too save that the salmon was piping hot.

now back to your regular programming...

I'm stuffed. and the W1Fe unit (along with our church small group tonight) is skrewed. Don the gas masks folks LOL
