My wife gets the credit for this. Her mother was a chef, and this simple salad is awesome.
Grill a venny tenderloin rare. ( You all know how )
Take it off and let it rest until COLD, don't cut it.
Slice a cucumber razor thin, squeeze a few fresh limes and reserve the juice.
Slice the loin razor thin.
Prepare a bed of your favorite salad, she used Baby Spinach.
Toss the cucumbers, venny, and lime juice together.
Immediately pile on the greens and go at it!
( You cant let it sit or the lime juice "cooks" the meat )
