I made this last night and it is unreal. I got another reipe from JohnS that I did with the other breast though froze it since one breast was a meal. Thanks again John.

Wild Turkey Breast Stuffed with Wildrice/cranberries/oyster and morel mushrooms:

Sliced turkey breast to make a pocket and salted/peppered and beat with a meat tenderizer.

Make some Uncle bens wild rice.
Saute Oyster Mushrooms and morels (they aint cheap to buy at wegmans, so find some) in butter with shallots till soft. Add dried cranberries and mix with cooked rice. Stuff in breast and wrap with thick pepper bacon, securing the hole/slit with butcher twine (or toothpick). Bake for 45 minutes. I made some homemade Bernaise and topped it with that to eat (you can buy a package of it since it can be tricky to make). Very tasty stuff.

Smoker would be the best method IMO..., and Bernaise w/ bacon was a bit overpowering.. good, just rich. I would swtich up the gravy to something with white wine or brandy and mushrooms.
