I just got a 40 inch masterbuilt electric smoker and want to make bologna in it tomorrow, my question is, do i use the water pan when using the smoker for bologna.

I never have, I have a Smokin Tex electric smoker, I just set the temp to 160, it usually takes aboout 12 hours.
