I have been very happy with my new process smokehouse. Here are a couple pics of the last batch of DBL hot and Regular stix. 25lbs of delish.

The hanging and starting of the fire.

It takes 4 hours at 170-185 deg f to complete the process. My normal process is to hang meat - start fire - set the lid on the fire - check the temp after 45min - if it is good - go to bed and take them out in the am.
