I've heard of people eating it, but like you said, it has to be right as it's coming up. Once it blooms out, if you eat it, it'll feel like you have millions of needles in your mouth. I don't know from experience, but I know of someone who did eat it too late in the season and said it was the worst thing he'd ever eaten bc of the feeling in his mouth.

when I was 13 or so, A buddy and I were turkey hunting and came upon a patch of "rhubarb"..
..jack-pot....we started grabbing it up and putting it in our pockets....well until he took a bite out of one of them
