I froze about 6 cups of persimmon pulp this year. Been making pudding out of it, absolutely delicious! The fruits themselves are pretty fantastic when they're fresh. I might try making ice cream out of some of what I have left in the freezer.
Yeah, that's why I ripened them inside. I picked a whole bunch while they were still hard, put them in a cooler with a couple of apples, and left it closed. Checked them every day, and it took about a week but almost all of them ripened right up.
