I froze about 6 cups of persimmon pulp this year. Been making pudding out of it, absolutely delicious! The fruits themselves are pretty fantastic when they're fresh. I might try making ice cream out of some of what I have left in the freezer.

great fruit when ripe, but when you bite into a bad one, makes you feel like you are trying to suck the back of your throat right out into your lap

Yeah, that's why I ripened them inside. I picked a whole bunch while they were still hard, put them in a cooler with a couple of apples, and left it closed. Checked them every day, and it took about a week but almost all of them ripened right up.

I was viewing Coyote research for the state of Tenn... Of all the fruits coyotes eats..It was the persimmon that they found more of in the coyotes stomach..

persimmons great place to hunt deer...better than oaks..acorns
