JetMaxx's Slammin' Venison Nachos

1 lb venison ground
12 oz BBQ sauce(The cheap stuff works fine!)
1 Med Red Onion(1/2 of it chopped & 1/2 of it loosely minced)
1/4 tsp salt
1/4 tsp black pepper
3 oz Olive Oil
1 1/2 Cup Spaghetti Sauce
1/2 Small Can(10 oz?) of Black Beans
6 Cloves of Garlic Finely Minced
1 Bag of Tortilla Chips(We prefer the blue corn chips but any kind will work)
1 Bag of Shredded Cheese(We prefer Mozzarella but any kind will work)
Cooking Spray
Sour Cream
Sliced Jalapeno Peppers

In a skillet or frying pan, combine the olive oil, the 1/2 chopped onion, and the salt and pepper. Saute for 2 minutes. Add the venison ground and cook until brown. Mix in the BBQ sauce and turn off the heat.

On a baking pan, line with foil, spray it lightly with cooking spray, and cover it liberally with tortilla chips. I usually go 2 or 3 layers deep. Cover the tortilla chips evenly with the follwing layers (in this order):

1. Venison BBQ mixture
2. Spaghetti sauce
3. 1/2 Can of Black Beans
4. 1/2 Minced Onion
5. 6 Cloves of Garlic. I have a garlic press and use this to "spray" the garlic over the above ingredients. It forces the unpeeled clove through very small holes and does all the work for you. If you don't have a garlic press, just finely mince the 6 cloves of garlic and spread on evenly.

Lightly spray the above collection of ingredients with the cooking spray and place under the broiler(not direct but a shelf or 2 down from the top) in the oven for no more than 10 minutes or just long enough to allow the heat and cooking spray to sear the garlic and onions. They don't need to cook all the way through as the freshness of the garlic and onions add great flavor. Monitor to make sure you are not burning the exposed chips.

Remove the pan from the oven(be very careful as the pan will be very hot!). Evenly cover everything with the shredded cheese, place the pan back into the oven for 3 minutes or until the cheese has melted.

Garnish with Sour Cream and Sliced Jalapeno Peppers.

Once you've enjoyed this, you will never take venison ground for granted ever again! Enjoy!
