I know they are an invasive species and not protected but can they be shot on SUNDAYS

It may be tough to explain to a WCO why you're out hunting waterfowl on a Sunday... I usually shoot them while legally hunting other waterfowl. I suspect they would be legal to shoot on Sundays, but wouldn't want to try to explain to a WCO that I was out hunting mute swans on Sunday when they ask me what I was hunting...

Explaining to a WCO would be one thing but how it may look to the non-hunting public would be worse. Wait for a waterfowl season to be in and then take them.
