pick em rub the dirt off on my pants eat raw then go home and breathe on my wife.
BTW, I was out easter afternoon and at my patch of ramps they need about another 7-10 days and then the pickin will start
I just pick em when they're young and the leaves are about 6 inches tall. Wash and clean them good, put butter in a big old frying pan and sautee them till soft. If I get a real big mess of leeks, I blanch and freeze them.
Ham'n'ramps, fried taters'n;ramps, eggs'n'ramps, use in tatersalad instead of onions, stuffed in grilled trout, fill a qt jar with leaves and stems then top off with vinegar for salad dressing, add to soup, plus I dehydrate a mess so I have them all yr. That should be astart Erik (BOG)
