Made my first patch ever today, hottest stuff I've ever eaten!
Peel, cube, process with white vinegar and a little water! Bamm! 10 pints made today!

No water in mine, nor do I peel it. I scrub the roots with a very stiff brush, rinse them clean, chunk them up and then put them in the blender. Blend them without any liquid. Now is the important part. Let it sit for a bit before you add the vinegar. The longer it sits without vinegar, the hotter it will be. I add just enough vinegar to make it like a thick milkshake. Then put it in jars and in the fridge it goes.

I've heard that the vinegar if added right away will preserve the heat. I've also heard what your saying Borden. I put mine in while blending and it's almost to hot to eat!

We prepare everything outside. Most of the cleaned pealed root is placed in food processor. About 15 percent is ground through great grandpaps hand crank grinder. The 15 percent adds a different texture.
We also add beat juice and three tablespoons of cane sugar.
I have always heard the age of the root determines the heat level. Younger roots are supposed to be hotter...
