You "turn" the ears, as in turning them inside out. There are tools to help with this but I just use a scalpel in the field. Separate the hide from the cartilage, on the backside (hairy part) of the ear. As you are pulling the cartilage and cutting you will be turning the ear inside out, go all the way up to the tip.
