Breast them out, slice the breasts into 1/8 thick strips, soak in Backwoods Jerky Seasoning, smoke cure it.

Duck & Goose Jerky is Very Good!

i crock potted a mallard yesterday with orange marmalade, oj and apple juice cooked for 5 hours till fork tender. omg was this good. first time I did it this way
