I found myself a nice dryad's saddle mushroom (pheasant's back) yesterday. Only problem is that I think it was a little over-mature. I fried it up and it was like chewing on rubber. Anyone else eat these? What do you think of them?

Pick the little ones. If you take a big one, just cut the edge about an inch back. The rest of it is pretty much unedible. They're not Morels but they are good eatin!

I find when cutting those edges if the knife slices through without effort, thats fine. when it starts to hang up then it'll be tough to eat. we found about two pounds this past weekend in Erie. thats two pounds of edible after slicing the edges. We also found about 30 morels. some yellow and some greys. Couldn't spend too much time in the woods cause of the high winds. branches falling everywhere. needed a hard hat.
