Pick them when they are young for the best table fare.... People do candie them like watermelon rind too..

Buck, I think I'd find an old leather shoe I no longer wear, and try to marinade and slow cook it into something edible, before eating a Pheasant Back. LOL

I like to dehydrate them and then grind them into a powder. I add them to soup stock, marinara sauce, etc.
