10 pounds of meat;

4 tbsp. salt
1 1/2 tbsp. black pepper
1/8 tsp. red cayenne pepper.
1/4 tsp. crushed red pepper flakes.
2-3 tbsp. ground sage.
2 tbsp. ground thyme.
mix and fill casings.



This recipe works well for us. I just made a bunch of moose sausage this week.
