I am going to try canning some ramps this year for the first time. Does anyone have any good recipes or techniques that they would be willing to share?

I found ramps for the first time this year, and I'm thinking my pickled ramps will go great in place of a cocktail onion in a martini.

Tried my first jar of canned ramps today. The brine was much sweeter than I would have liked. The taste was good but way too sweet for me. I'll have to try again next year.

They go to seed about this time of year. leaves are turned yellow around hear anyhow. We picked a bag but will probably be the last for us. Wife will be happy

Didn't make it out today. Maybe tomorrow after work I'll go check my spot to see how they are doing. Maybe pick some. Maybe not. Haha

I bought some a few years ago from a WVA lady who sells them along the road plus cans them to sell. They was very good I had my mother from then on to can them using what they call a bread and butter pickle recipe.
