Any one have a recommendation on a set of knives and/or kit for butchering? I purchased a crappy set years ago and would like to upgrade to something (complete set or pieces here and there) that will last a long time.
The Outdoor Edge sets are quite nice.
That beind said, I use a collection of knives from Old Hickory. Everything from thin bladed slicers to cleaver. You can reshape the oak handles to your individual hands if you desire. Good ol' 1095 steel made in Franklinville NY. Look on Amazon.com for some pretty good prices. You can be cutting meat for 50 or 60 bucks. JMO
