I have two of these knives (curved) and they are great for processing.

I just posted about some knives in the gear forum a couple weeks ago. i got a set of knives from Sams Club and they are NICE. Very sharp, quick to touch up with a steel, and they have enough flex to do what I need them to. I have boned out 2 deer now, and the thin knife works better than my filet knife for geting the silver skin off. Best part...they were only 9 bucks for the set.
