my annual menu post.......... im gonna do wings and fries this year. any one have any favorite sauces that you wouldnt mind sharing the recipie? im thinking about seasoning some fries too any suggestions? whats everyone else having?
I won't be at camp for the opener because I hate the crowds and am going to work. But I'll be there Sunday evening through Wednesday morning and we are having Elk County Surf and Turf on Monday. Elk steaks and fresh caught trout with seasoned potatoes and baked beans.
Favorite wing sauce of mine that i do at home is butter, honey, and old bay (lots of old bay).... mmmm good. I also do a butter, garlic, parmesan cheese.
Smokin two pork butts this year, for Saturday. Will probably do my camp potatoes (diced red potatoes, diced onions, diced bacon, season all, butter) to go with.
Mix together pat wings with paper towels
Roll in breading in pot,
Put in fridge for at least 1 hour before frying.
WING SAUCE
FOR 2 DOZEN WINGS
¼ CUP FRANKS
¼ CUP CRYSTAL
1/8 CUP OLIVES
1 TSP GARLIC SALT
1 TSP VINEGAR
1 TSP LEMON JUICE
1 TBLP HONEY
½ STICK BUTTER
½ STICK MARGARINE
½ TSP CAJUN SEASONING
32 oz crystal hot sauce
1/2 stick of butter
1/2 cup of bbq sauce, I usually use sweet baby rays original
1/4 cup of syrup
Mix all ingredients in sauce pan on low heat until thoroughly mixed. You can baste the wings with sauce on grill or smoker or dunk the wings in the sauce for 10-15 seconds after they have been cooked.
Can add a little more syrup or bbq sauce if to hot to cool them down a bit. Also saue is really good on shrimp as well.
I just make my wings in the oven til they are done, then melt butter and shake in Red Hot, hot sauce until you get the heat you want. Then toss your wings in the sauce till they are fully coated. Put some blue cheese dressing in a bowl, cut some celery sticks and Bob's your uncle.
Don't go to camp for the opener anymore due to the crowds and rut kiss , there will be Plenty of Trout left
when I go up for Turkey in May.
Have to admit I do miss the opening day, probably hit a local stream the day after.
Don't want to rain on your parade but ya got to do better than that.:smile2:

I love wings but they can't match a thick NY Strip or Porterhouse.

My buddy and i have been going the second weekend now for about 4 or 5 years. Much more enjoyable experience with less people plus we can fish friday evening.
We cook 40# wings and fries every year on Friday or Saturday night of Trout camp.An individual that goes by the name of “wingman” has 2-3 fryers going and beverages flowing. Best $&@/ wings I’ve ever had. This year I’m going to make a mixture of southwest, spam and reuben ball’s for the fryer. Trout camp is a blast and every regular looks forward to it.
I prefer the steaks over the wings myself but I can eat wings occasionally with a mild sauce
