Teach, you should really look into butchering your own deer, honestly it is so easy to do. We started doing ours about 10 years ago and have saved a ton of money. Really good videos on youtube if you need the basics to get started. You'd be surprised how easy it is. Just get that hide off fairly quick (quicker the easier) and let it hang until you have the time to cut it up.(Outside temp permitting)
Never used them as I also do my own but I believe Palumbo's in Ridgway processes them also, I like their beef sticks and steaks are pretty good.
