If you get ahold of the PA Outdoor News, the June 8 issue has a recipe for "Thai Trout with Peanut Sauce". Looks great.


For me, Trout has to be dressed up from the standard butter and onion in tinfoil and tossed on the grill.

Brine the fillets in brown sugar and salt and smoke them. You could smoke them whole as well.

Lol...I actually did that, but added about a 1/2 cup too much salt. They were extra salty. I didn't want to waste them, so I used them in this recipe.

I brine mine in salt water, brown sugar, and orange juice for smoking. One of my other preferred recipes is to dip them in egg then crushed up potato chips then fry them.

I usually just pan-fry mine with a little butter/bacon grease along with some Old Bay. If they are bigger than average, I'll stuff them with crabmeat or mushrooms and sprinkle them with Old Bay and bake in the oven.

The only trout that I will eat without being smoked are native trout, they have flavor. Stocked trout pretty much do not. I have not killed a native trout in over 25 years, I do enjoy fly fishing for them but I no longer kill them.

I love smoked trout. Also take trout that have been gutted and head removed and cut along one side of the backbone (butterfly) so the trout will lay flat, skin side down, on some foil. Then just season with butter, lemon and a little old bay. Great on the grill or even better on a camp fire.

I haven't eaten a trout in years, but some time ago a friend shared a good salmon recipe with me. 1 part maple syrup 1 part soy sauce. Baste it on while grilling, the syrup carmelizes nicely.

I take a pine board and soak it over night in mix of liquid smoke, garlic,onions add salt, pepper a little Jack Daniels, and a pinch of my favorite beer, add two trout with heads attached , stuffed in a butter/ lemon mix....Grilled until it is golden brown....Take it out, throw the Trout away and eat the board....
