Planning on planting new Apple trees, but when?

I know a few of you guys can help me out...

I'm planning on planting some new apple trees, hopefully 10-15 of them, and have been reading online that late fall or late winter/early spring are the best times.

Do you suggest a late fall planting or an early spring? What are the differences?

I have a feeling if I plant in late fall the deer will eat them down over the winter. Help me out!

I'd plant them in the spring.
Be sure to put a fence around them so the deer can't get to them. Also, spray inside the fence area with roundup to keep the grass down. This will keep the mice away from the bark.
