I found that if I just store them at room temperature to "cure" they are full of seed moths a month later. I know with black walnuts, they are normally placed in bags and permitted to dry a couple months before use. I have no idea if that is good or advised for hickory nuts.
I found that black walnuts crack easier after being frozen. Used a big bench vise to crack them with out smashing them.
The bench vise seems to work better with hickories as well. crack them with out crushing them put them in with the ends to the jaws and slowly squeeze it until the shell cracks all across. Then remove for picking out the meats
I have a dirt sifter I made. I spead the nuts out on it in my shed. They dry pretty quick. I work the hulls off then hang them in a mesh bag. Alot of work cracking them but they're great in brownies, fugde or on salads.
