Wild Parsnip

Has anyone ever dug up the roots of Wild Parsnip and eaten them? We have lots of it groing up here in Northern New York. Apparently it is the same species as regular parsnip, but like so many other species, has become wild and is now considered as a problem invasive species in many states. I am not a huge fan of parsnips, but they are tolerable roasted and my dad always liked some in his beef/venision stew.

forgot to mention that you should not get the sap of the stem of the plant on you, as it can cause a photodermitis (rash and blister.

I don't know about the wild ones,but I sure like the supermarket ones with potatoes,onions,carrots in the roasting pan with my pork loin.

careful picking this stuff its easy to get it mixed up with poison hemlock it will kill you.
