Zukes

The first harvest out of the garden every year are the zucchini. We picked the first couple of the year yesterday and my wife made zucchini brownies out of them.

OK here is the recipe for zucchini brownies

Ingredients:

2 cups zucchini -peel & grate/drain
2 cups flour
1 1/2 cups of sugar
1/2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. baking powder
1/2 cup cocoa
1/2 cup vegetable oil
2 tsp. vanilla

Instructions:

Mix dry ingredients. Combine zucchini and oil. Blend and mix well. Add vanilla and mix again. Spread the batter on a greased 9X13 pan (batter is very thick). Bake at 350 for 20 minutes. Frost or dust with powdered sugar if desired.

My wife does does not add any frosting or powdered sugar. They are excellent plain after it's cool!

Wife was busy today. We got a bunch of zucchini today.



Then she made chocolate chip zucchini muffins and bread!

Zuks is great brain food!. Cooked, puread, raw, piclked all are great ways to serve up the perfect food.
