1 head of cauliflower
4 Tablespoons butter
3 Tablespoons bread crumbs
1 Tablespoon chopped parsley
2 heaping Tablespoons flour
1 1/2 cups milk
1/2 cup grated swiss cheese
Cut the cauliflower into individual florets and boil until tender. Then drain, but save a half cup of the liquid.
Butter a baking dish and then coat it with breadcrumbs.
Melt 2 Tablespoons of the butter in a saucepan over low heat. Stir in the parsley and flour until slightly brown.
Gradually stir in 1/3 cup of the cauliflower broth and the milk.
Simmer, stirring constantly, until the sauce thickens. Then stir in all but 2 Tablespoons of the grated swiss cheese.
When the cheese has melted, pour one third into the baking dish, and add the drained cauliflower. Pour the remaining sauce over it.
Mix the remaining bread crumbs and cheese and pour over the cauliflower, dot with butter, and then bake in a pre-heated 375 degree oven for thirty minutes or until the top turns golden brown.
