Tree help.

I planted a peach tree in my yard five years ago. About three years ago, I pruned it in the winter, mainly to shape it, and that year it got a ton of peaches on it. The year after it looked a little ragged, so I didn't touch it. This year (and last) it has some golf ball sized fruits on it, but now it only has about half the leaves on it that it should. The neighbors trees are much more leafy. I know that excessive fruit production may be the trees reaction to stress. I'm loathe to prune it anymore. Is there any saving it, and is it in fact dying? I've heard that you can go out in spring and pinch all the flowers off and then the tree wont get any fruit that year but will put it's energy into leave and branch production. Should I try this?
