Storing beets

I dug my three kinds of beets today and want to know if anyone has any ideas on storing them. I bought a couple of bags of sand and thought about storing them in 5 gallon pails buried in the sand

Re: Storing beets

we do the same as diyasub with ours. it simple and dose not take a ton of time. also makes easy to prepare when ready to eat.

Don't tell fish stories where folks know you especially, don't tell them where they know the fish.

Re: Storing beets

Do they freeze into a solid mass? We freeze blueberries but they are dry when we freeze them.
