First time recipe. This is a homemade pheasant sausage. It's a fresh sausage with pheasant, pork, apples, honey, sage, thyme, and some other spices. I was attempting something along the lines of a breakfast sausage. Finished on the grill. With hunting season closed, it's time to start emptying the freezer.
I do not employ the twisting method....we stuff the length of the casing and then slice down to grill length with a sharp knife.
As I slice each link, there is a bit of sausage left on the knife....and I collect those bits in a pile as we package the links for vacuum sealing. When we are done, I make a nice little sausage patty for the grill that I can make right away! Winner winner, sausage patty dinner!
