Whatís for Dinner ?

Smoking ribs and chicken. About another hour and a half to go. Wife got some Grill Mates Applewood Rub that I am giving a try. In about another hour I am going to glaze everything with BBQ sauce.

No pictures, but seared duck breast, domestic, medium rare with a sauce of orange juice and cranberry juice and twice baked potatoes with sour cream chives and sour cream, topped with white cheddar cheese. It was killer!

Tried a couple of the grill mates when on sale. Not overly impressed so into my marinade cupboard. Everything goes better with BBQ sauce, long as it has a generous helping of molasses in it. 🙄

If Sunday hunting was not already illegal, who among us would not laugh at making it so?

These were spareribs. A little tougher than I would of liked but the flavor was tremendous. Smoked for four and a half hours at 225. Used applewood chips and the rub I mentioned. Also mopped them a couple times with a vinegar based sauce I made. Any suggestions to get this cut of meat to come out a little more tender ? Other than it not falling off the bone the flavor was awesome.

I tend to wrap them with apple juice and brown sugar after the 2 hour mark. Then if going to mop remove from wrap and mop the last fifteen minutes. The ones you made sure look good though.

I usually do the 3-2-1 method. Smoke it for 3 hours with any kind of rub, then wrap it in aluminum foil, but putting on honey and brown sugar before wrapping, then unwrapped and mop with bbq sauce for the last hour. Smoking meat forums is a good resource for smoker recipes and tips and tricks.
