On Friday I did four hunks of roast two wrapped in bacon 2 just basted. Also used some good rub but not too much. 3 hours 250 degrees with charcoal and some apple wood. Turned out incredible. The heart was brined in apple cider vinegar water garlic salt and pepper. I stuffed it with apple garlic and onion then put in a foil tent with some of the brine 15 minutes in the oven at 400 and five minutes rest. Man I love this stuff.
