What chips to smoke food with?

People are having a grand time cooking with smokers but most folks aren't familiar enough with the various types of chips to know what effects they have on the food being cooked. Here's your list!

Grapevine. I thought I was the only one who used that!

I know all of the uses for different types of meat, butI mostly use hickory for everything. Except fish, for that I use some type of fruit tree wood.
