smoked salmon

put 10 lbs of salmon in the smoker tonight and will do 10 more lbs tomorrow night. did 35 lbs 2 weeks ago. may be doing more in another week. I sure like the new smoker with the timer

Try basting your salmon with pure maple syrup while it is smoking. It is killer.

the "brine" it is soaked in has salt, sugar and mt. dew and water. I may try putting some on a couple pieces tomorrow night.

its a Mastercraft 40" stainless steel, electric with temp setting up to 275, auto timer/shut off and temp probe, with a light and glass window in the door. actually, I do all the "smoking" in my old "Big Chief" outside and then put the meat in the new one in the garage. that way I don't have to deal with all the smoke inside plus it keeps the new one cleaner inside. I have had homemade smokers for 40 years and it was time to get something better.

I went with the Masterbuilt 30" electric smoker with digital timer and temperature control. I don't have a garage, so I needed a unit that could be moved from the mud room to out onto the deck without a lot of effort. I thought about grabbing a furniture dolly from Harbor Freight but it turned out that I can just corner to corner walk it right out the door with no trouble.
