Looks like a great recipe and will need to give it a try.


One thing I will comment on is I have made my chili in a similar manner and the ground venison tends to be a little "chunky" despite how much you chop on it while cooking. I like my ground venison to be finer in the finished product so what I have started doing is after cooking the onions, pepper, garlic and spices then add the venison and once browned I add a can of beer (typically lager) and let the meat boil in it for about 20 minutes covered before continuing with the tomato and bean parts. You could do that with your chicken stock if you did not want to add beer.
