Steelhead cure recipe

Plan on smoking some Steelhead this year.Any recipes to cure & smoking methods?

1 gallon water
2 cups kosher salt
1 loose cup of brown sugar
1/2 cup vinegar

Mix all in a pot. Warm on stove until sugar and salt melt but do not boil. Let cool to room temp.

Put your fish in baking dish, cover with brine and then cover dish in saran wrap. Place in fridge about 8 hours then smoke. Try it once - if you like less salt then brine for less time, if you like more salty go longer.
