snack sticks

What casings do you prefer to use to make your snack sticks? I bought a snakin stik kit last year from High Mountain and it worked okay, but the casings were very hard to get to fill to the correct amount without air pockets or without having them bust open from over filling. Is this typical for most casing? I'm sure there's an "art" to filling them properly, just haven't got it worked out yet, but was curious what everyone else is using.

Re: snack sticks

I always use collagen casings and they work great for me. After smoking a drop them in ice water and they stay nice and tight with no air pockets.

Re: snack sticks

I just made my first batch of sticks, and I used Cabela's collagen casings (since I'm right by Cabela's, it was convenient). Worked great, and I did the cold water bath when I pulled them from the smoker....worked out nicely. My daughter's gobbling them up!
