Hot peppers stuffed with sauerkraut recipe?

Got a bunch of peppers from the garden and want to stuff them with sauerkraut and can them. Anyone have a good recipe for this? I searched online but was looking for a good known recipe

My mom is known for these and they never get put away once a jar is opened. It's really simple too. The mix is 1 cup of water, 1 cup of apple cider vinegar and 1/2 cup sugar. This mixture is heated on a stove until the sugar is dissolved. She said she tastes it then and adds more sugar sometimes if she wants it sweeter. Then you stuff the peppers with saurkraut and fill a jar with the stuffed peppers. Next just fill the jar covering the peppers with the liquid and put the lids on. Can for 10 minutes for pints and 15 minutes for quarts.

Use a good sauerkraut, don't over process or they lose their crispness. Also, the fresher picked peppers work better. Don't pick them and let them sit for more than a day or two.

She uses the red cherry peppers. About the size of a golf ball. If you've ever had those peppers stuffed with prosciutto wrapped provolone it's the same ones. She gets them at roots but they're almost done I think.

My father in law makes them with large banana peppers and his homemade kraut. I'll put them on a hoagie bun and eat them that way. DELICIOUS.

Yep, had them with banana peppers too. I like them just as much, they just have less of a "bite" than the cherry peppers.

We make them with hungarian hot wax peppers. Everybody loves them.
