Wild Turkey Schnitzel

I made a wild turkey schnitzel with the gobbler a friend shot. It came out delicious.

I put the recipe here. Let me know what you think.

Looks great, the only thing I would do differently would be to dip the cutlets in flour & eggwash before rolling in breadcrumbs. I like them with lemon butter & capers, but the dipping sauce looks good!

Catch & release is for guys who don't know how to cook

Agree with Uncle Nicky. I have found the dry-wet-dry gives you a nicer crust which is especially good when putting a sauce on that soaks in (like lemon butter - yum.)

Looks like a great recipe and I will give it a try.
