I just bought a whole shoulder in the Commissary. 17+ pounds for $12. They almost always have them but I never looked at the price until last week. Guess I always figured they'd be a lot more expensive.
As most of you may or may not know, every deer or wild pig I shoot over here I have to pay to keep the meat. Deer are 5euro per KG, on the hoof. And pigs are 3 euro. That alone makes it difficult for me to grind it up for sausages etc. I do small batches, but not like I did back home with Whitetails. I sure do miss it. And I never use any for making jerky!
But, I also enjoy venison steaks, roasts, and stews.
So for approx. $0.55 per pound, I'll be making a lot of straight pork sausages and kielbasi now!
I'll still make the salami sticks I made last week with venison mixed in, though. Can't see making something called Landjaeger (Country Hunter) out of anything else.
People are sick of politicians, and me, I hate cats in the house.
