New duck/goose recipe
Like a lot of other waterfowl hunters I have always struggled with finding delicious ways to make goose or duck. Over the years my go to has been either jerky or pulled bbq goose/duck in the crock pot. We shot a few birds on a creek on Wednesday after that crazy snow squaw and figured I would try something new.
Fried Goose Cutlets
* Soak meat in ice water for 24 hours
* Cut breast meat into thin slices (like a chicken cutlet)
* No good way to say this but pound the meat with a meat tenderizer (in a ziplock bag to create less of a mess)
* Each piece gets an egg bath, then into a bowl with flower and then coated with Italian bread crumbs
I used an air fryer but I also made a few in hot peanut oil on the stove. Both turned out amazing. I dipped them in bbq sauce. I think next time I am going to do the same but put marinara sauce and provolone cheese over top.
If anyone else has done this or tries it out let me know what you think. Its a nice change of pace and was the most tender goose meat I ever ate.
