Eating muskrat...how to "butcher"?

One of our landowners wants us to save a muskrat for him to try eating. How should we save the meat?? Cut chunks off of it?? Like little muskrat steaks?

Gray Fox:
Rat: Mink:

Cut the feet, head, tail off. Remove guts and freeze in ziplock bag. Hind legs, and back are great. Parboil and fry in pieces or whole.

I just eat the back legs...They are awesome and can see why restaurants serve them..Such a good meat!

Isn't there something about making sure the glands have been removed? I am not sure where they are located, but I think when you skin them the glands should come off as well.

Yes, I was wondering about the glands myself. The chunks of meat my son has cut off do not smell "musky" at all so maybe the glands did come off with the skin.
