Re: how does squirrell taste?

Ate lots of squirrel growing up. They are tasty. My mom used to quarter them and fry them up in butter, with some onions and parsley.

Like us, with their tongues.

if you like rabbit, you'll most likely enjoy squirrel.

I don't have ducks. I don't have rows. I have squirrels. And they're drunk.

Yep, I ate my share as a kid. I think they are delicious when fried as already described.

Stronger than free-range chicken but mild as a game meat.

Not a bad idea to parboil the older squirrels first and then roll in seasoned flour and fry in butter and oil.
Do not neglect making gravy.
My mother loved the brains....I never acquired her sophistication in such squirrel appreciation though.

Re: how does squirrell taste?

I think they taste a lot like cottontail, I cook them the same way. Par boiled with a carrot, some cellery stalks and pepper corns till they are tender, then shake them in a bag of flour , salt and pepper and fry them in bacon fat, crisp on the outside, moist and white meat on the inside. Dublin, did you know there is a disease similar to mad cow disease that occurs in appalachia from those people eating squirrel brains. I sure would never try it.

I have heard of such issues and concerns with many organ meats but my Mother lived to be 88.
I tried squirrel brains over 50 years ago and never saw a need for a retry.
So, I'm safe on that count.

Re: how does squirrell taste?

Do you guys think greys are better than fox or is it me. Maybe I didn't parboil it long enough. Probably as good but fox seems to be tougher. Aren't any fox squirrels right around here but have gotten a few in other places. Squirrel is good eatin'. Try it you will like it. Squirrel, the other white meat.

You canít get them if you ainít in the woods!!
