Deer Jerky

Anyone got a good jerky recipe. I have a bunch of deer steaks in the freezer I'd like to make jerky out of...

Re: Deer Jerky

Taking this the other direction, I cook venison steaks on the grill and my wife says they are delicious. Put your grill on high. I salt and pepper them heavily and baste with melted butter while I cook them, 4-5 min per side is all it takes, less if they are thinner. Steakhouse quality flavor out of venison in my humble opinion. Try one before you slice them all up.

Sadly most of my life has been wasted, but the rest I spent hunting, fishing, and trapping...

Re: Deer Jerky

I make sticks out of deer burger, (save the steaks for the grill).

Nesco makes a seasoning called andouille sausage flavor that is my favorite....use a dehydrator and a jerky gun.

Flavor is great, always enjoyed...my biggest problem is finding a jerky gun that isn't a piece of junk.....looking for a good metal one if anyone can suggest one....looked on Cabelas and the one they have has some very bad reviews.....

I prefer my kid hunt and fish rather than steal and deal,

Re: Deer Jerky

Cut the meet in 1/4 inch thick strip. Place in layers in a glass bowl. On each layer sprinkle, Worchestershire sause, Liquid Smoke. Lowrey's Seasoned Salt and Garlic Powder. When done layering, cover with just enough water to cover the meat. Marinate for 3 to 4 days in the refrgerator. Hang from toothpicks in your smoker or gas grill. Try to keep the heat under 200 degrees. I do mine on the gas grill with only 1 of 5 burners, no meat hung over the lit burner and foil over the grate and it takes 6 to 8 hours depending on how hot the grill gets. Make sure you don't cook it too long.

Re: Deer Jerky

Ground deer meat mixed with just about any Hi Mountain jerky mix. I like pepper garlic. Always double the seasoning amount. Use a jerky shooter to put strips on a Nesco dehydrator for 5-6 hours. I've tried strips of meat but the thickness varies which makes cooking times vary too much.
